Goose is fattier than chicken or duck, so it retains its succulence to the last bite. We start by marinating select breast and thigh meat for two days in teriyaki sauce, brown sugar, wine, vinegar, onion powder, garlic, lemon juice, sea salt, and other festive ingredients. No nitrates or nitrites added.
